This morning I was craving a breakfast food mom would make for me when I was younger and living at home. It had a layer of rice followed by cabbage, and was toped with cubed tofu and soy sauce. Because I didn't have block tofu this morning, i created my own tofu top with yeast flakes, white miso, and silken tofu crumbled. It was close to "cheese eggs" in taste.
And then I put that on top of the rice and cabbage and heated the whole thing for a minute or two in the microwave to wilt the cabbage.
Cooking magazine cover fail? Maybe (ok definitely). But it tastes a lot better than it looks.
No way! It looks great and I'll bet it tastes even better!
